These quick and easy to make cookies are simply delicious. Perfect for the afternoon snack, they will confort you during the cold and rainy days of autumn.
Ingredients
Dry ingredients
2 cups of unbleached white flour
½ cup grated coco nut
2 tsp of baking powder
½ tsp of grounded cinnamon
¼ tsp of grounded cardamom
¼ tsp of grounded clove
a pinch of salt
Humid ingredients
½ cup of coco oil
½ cup of sugar
1 egg
1 tsp of vanilla extract
1 cup of pumkin purée (or another squash)
½ cup of hot milk (to prevent hardening of the oil with cold milk)
1 ½ tsp of freshly greated ginger
Directions
In a bowl, mix the dry ingredients together.
In another large bowl, mix the humid ingredients together.
Incorporate the dry ingredients to the humid ones and stir softly with a wooden spoon until homogeneous. Do not over mix.
Oven bake at 350°F for about 15 minutes or until the bottom of the cookies are golden.
