Directions
On the dough of your choice, spread a thin layer of pesto, cover with cheese, then garnish with sliced fresh tomatoes.
On a baking sheet, oven cook at 400°F until cheese is golden (about 10 minutes).
Before serving, add the greens of your choice (fresh basil, arugula, sunflower sprouts) on top of the pizza.
During winter, use pesto and tomato confit ** (that you'll have previously prepared and freeze during abundance season) and opt for kale (thinly chopped and rubbed with olive oil and a little bit of salt) as a green garnish.
For spicy lovers, add a dash of hot chili oil on top of the greens, just before serving. You can prepare the spicy oil yourself by decanting olive oil into another bottle and adding hot peppers cut in halves, leaving to macerate on the counter. You can also add a sprig of rosemary and/or a garlic clove cut in half, or any other ingredient that you like, to make a flavored oil.
