Very simple to prepare, this crispy and summery salad will delight your guests. Have it as a principal meal to have a light lunch of serv it as a side dish with a sandwich or grilled meat.
1 small cabbage
1 fennel bulb
2 Tbsp of olive oil
1 Tbsp of lemon juice
Salt and pepper
Mince the cabbage and chop grossly the apple and the fennel.
Mix together with the oil and the lemon juice.
Salt and pepper to taste.
For a variant of the recipe, use mayonnaise as a vinaigrette and add 1⁄4 cup of chopped walnuts.
