Enormous zucchinis transformed into a delicious dessert...perfect! When the sun is high and hot and your organic basket is overwhelmed with zucchinis, take advantage of it and fill the freezer with these delicious brownies!

Ingredients
2 cups of grated zucchini
1 1/4 cup of sugar
3/4 cup of sunflower oil
2 tsp of vanilla extract
1/3 cup of cocoa powder
2 cup of flour
1 tsp of baking powder
1 salt pinch
1/2 cup of nuts or chocolate chips
Directions
In a large bowl, mix the grated zucchini with sugar, oil and vanilla.
In a seperate bowl, mix cocoa powder, flour, baking powder and salt.
Add dry ingredients to the humid mix.
As wished, add nuts or chocolate chips.
Pour into an 9" x 13" oiled dish and cook for about 40 minutes at 350°F or until a toothpick comes out clean from the center of the brownie.
For a gluten free version, use gluten free flour like rice flour, chickpea flour, buckwheat flour, quinoa flour, etc.
